Dairy Desserts- A Sweet Treat

I don’t know about you, but I’ve got a sweet tooth. Especially when it comes to things like ice cream and frozen custard. At any given time you can find a minimum of two different frozen dairy products in my freezer. Today, we have three kinds of ice cream, a tub a sherbet, and two containers of frozen cool whip. Talk about my happy place. 

Many of my favorite desserts are made from dairy, but do you know what goes into eat type of product and what classifies it as a sorbet vs sherbet? I didn’t either until I did a little research.  

Custard

Regular Custard is a cooked mixture of milk or cream with egg yolk. The consistency of the custard varies by how much egg is added. 

Frozen Custard contains a minimum of 10% milkfat and at least 1.4% egg yolk solids. They use fresh ingredients for their entrees and have a specialty flavor of the day for custard. 

 

Frozen Treats

Ice cream  is a dairy dessert that is loved by many. Cream and milk-fat are blended with flavorings like fruit and nuts, as well as sweeteners. Then, stabilizers and emulsifiers are added to enhance the overall texture and shelf-life of the product. Federal law states ice cream must contain at least 10%  milk-fat before the addition of bulky ingredients like fruit, and must weight at least 4.5 pounds per gallon. Have you ever weighed your gallon of ice cream? I’ll have to try it soon…

A few years ago Frozen Yogurt  was the big thing with Fro Yo places popping up across the country. Frozen yogurt is cultured milk or non-fat milk that have sweeteners and flavorings added. 

Sherbet has a low milk-fat content of 1% or 2% and is sweeter than ice cream. The minimum weight per gallon should be 6 pounds. Most sherbets are flavored with fruit. Sorbet is the non-dairy alternative to sherbet and is often called Water Ice. 

The last of the frozen dairy desserts is Soft Serve. Soft Serve is a type of ice cream that has air added during the freezing process, making it softer than regular ice cream. Soft Serve has been around since the late 1930s. 

Somewhere In-Between

Gelato  is a semi-frozen sweet treat  that contains milk, cream, egg yolks, sweeteners, and flavorings. Gelato is known for its strong, intense flavor. 

Last is Semifreddo, a semi-frozen dessert similar to custard or the filling of a fruit tart. It is combined with equal parts ice cream and whipped cream and is super delicious.
